Raw Carrot Halva Recipe

I love the traditional Indian Carrot Halva dessert, so I made up this recipe. This does not taste exactly like the cooked version, but it satisfies my cravings.

2 carrots shredded
1/2 cup raisins (optional)
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 tsp vanilla extract
1/2 cup raw cashew halves
1 TBSP raw agave
1 tsp extra virgin olive oil or coconut oil
1 TBSP raw tahini
1 TBSP lemon juice
pinch of sea salt
1/4 cup dried coconut for garnish (unsulferized and unsweetened)

Combine all the ingredients (except for the dried coconut), mix well. Adjust to your taste. Top with dried coconut. Serve cold. Enjoy.

On Being Raw

If you are struggling to be raw, I recommend...get UNPLUGGED!

Turn off the TV. Watching commercials leads to eating what they are selling. And studies show that the more you like a show, the faster/more you snack. Late night snacking puts on the pounds, weather you're raw or not.

I find a DVD leaves me more satisfied. There aren't any breaks to get up and go to the kitchen. The plot will end and not leave you hanging (unless there's a squeal). A lot of TV shows leave you wanting to watch the next episode; which leaves me wanting to watch more TV to get the satisfaction of an "ending" tonight.

I would love to see more "public service announcements" about eating healthy food.

We need to get out of the habit of eating in front of the TV and raise our kids to NOT get into that habit.

What You're Missing Out On

The decision to be or not to be 100% raw is an individual decision everyone has to make themselves. Although there have been times I've "fallen off the wagon", I most enjoy being 100% raw. Those times are opportunities for me to realize again (I forget so easily) that I'm not missing out on much!

"But", you say, "Debbie, what's so wrong with a little cooked food? What about beans?"

If you can successfully eat a little beans (not canned), a little brown rice or other healthy foods...Great! But the danger comes when we eat highly addicted foods (fried foods, refined flour, and white sugar). These are usually very hard to kick!

Kids make the darndest recipes!

My son Jordan was at it again.

He just made a guacamole with fresh basil, lemon, tomatoes and sea salt. It has a very nice taste, different from the usual cilantro, onion and jalapeno one I make.

It's good to experiment and think outside the box like kids do!

Healthy Kids

My son, Jordan, six years old, just brought me the smoothie he made in the Vitamix Blender!

It's amazing how interested in healthy food children can be when they can be involved in the process. Learning healthy habits start early. Teach your children how to make a green smoothie today!

Cavities in Baby Teeth

Kid's had Dentist Appt. today...seems that Jordan has a small cavity at six years. The Dentist said it's a baby tooth that he'll have till he's 11 yrs old, so she wants to fill it. I have mixed feelings. I wonder, can a small cavity heal itself?
